For the cake:

  • 3 large eggs
  • 1 cup granulated sugar

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder

For the cheesecake filling:

  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream

For the strawberry filling:

  • 2 cups fresh strawberries, hulled and sliced
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice

For garnish (optional):

  • Powdered sugar
  • Fresh strawberries
  • Whipped cream

Directions

  1. Preheat oven to 350ยฐF (175ยฐC).
  2. Line a 15×10-inch jelly roll pan with parchment paper. Lightly grease it.
  3. In a large bowl, beat eggs on high speed for 5 minutes until thick and lemon-colored.
  4. Slowly add sugar and vanilla while beating. Then add water and mix.
  5. In another bowl, mix flour, baking powder, and salt.
  6. Gently fold dry ingredients into the egg mixture. Do not overmix.
  7. Pour batter into the pan and spread evenly.
  8. Bake 12-15 minutes, or until the cake springs back when touched.
  9. While warm, flip the cake onto a clean towel sprinkled with powdered sugar.
  10. Carefully remove parchment paper. Roll the cake with the towel from the short side.
  11. Let it cool completely on a wire rack.
  12. For the filling, beat cream cheese, sugar, and vanilla until smooth.
  13. In another bowl, whip heavy cream until stiff peaks form.
  14. Fold whipped cream gently into the cream cheese mix.
  15. Mix strawberries, sugar, and lemon juice. Let sit 10 minutes to release juices.
  16. Unroll the cooled cake. Spread the cheesecake filling evenly over the cake.
  17. Spoon the strawberry mixture on top of the cheesecake layer.
  18. Roll the cake gently without the towel, keeping the filling inside.
  19. Wrap in plastic wrap and chill for at least 1 hour.
  20. To serve, slice into 1-inch pieces.
  21. Dust with powdered sugar. Add fresh strawberries and whipped cream if desired.
